MENLO PARK, CA - Madera, the signature restaurant at the recently opened Rosewood Sand Hill, the luxury hotel and spa near the intersection of Sand Hill Road and Highway 280, has announced a new cocktail menu of reinvented Prohibition-era classics designed to delight and intrigue restaurant and lounge guests. Created by Madera's lead mixologist, Lourdes Almaguer, in collaboration with Executive Chef Peter Rudolph and Pastry Chef Lori Olivero, the nine new cocktails are culinary twists on iconic classics using local, seasonal produce, handcrafted ingredients, and artisanal spirits and liqueurs.
"We opened Madera with the notion of creating an exceptional dining experience for our hotel guests and friends in the local community, whether they are enjoying cocktails and small bites in the Lounge or settling in for a memorable meal in our main dining room," said Michael Casey, Managing Director of Rosewood Sand Hill. "It's been wonderful to see people respond so enthusiastically to the initial vision. We decided it was time to take our cocktail program to another level by fully embracing the farm-to-glass movement and introducing more artisanal elements."
Almaguer, a Minneapolis native with 15-years of experience bartending at notable hotels and restaurants such as the Four Seasons Palo Alto and San Francisco's Mandarin Oriental Hotel and Campton Place, researched and experimented with recipes from the famous Prohibition-era cocktail bibles Old Waldorf Bar Days (1931) and The Savoy Cocktail Book (1930) to create the new menu.
Examples of the new cocktails guests will find on Madera's seasonal menu include: Jobim Caipirinha with Cachaca, Raw Sugar, Lime and Yuzu; Clementine, a riff on a classic Daiquiri with Meyers Platinum, Cointreau, Fresh-Squeezed Tangerine Juice, Lime and an Amarena Cherry Float; Asian Pear with Grey Goose Pear Vodka, Pear Puree and St. Germain Elderflower Liqueur; Honey Suckle Rose with Bols Genever, Dry Vermouth, Lemon and a Cherry Heering Float; and Lolita with Don Julio Reposado, Cointreau, Mango, Lime and a Chili Sugar Salt Rim. Named after the spicy young character in Vladimir Nabokov's eponymously titled book and inspired by the fruit vendors in the Mission District who sprinkle Pico de Gallo on fresh ripe mango, the Lolita mango margarita is enhanced by its salt, sugar and cayenne-spiced rim, and a favorite of Almaguer's. Madera's new specialty cocktails are $12 each.
